C&rsquo;est avec le citron que j&rsquo;ai d\u00e9couvert ce chef. Je savais d\u00e8s la premi\u00e8re seconde que je le ferai un jour. Mais je ne voulais pas me pr\u00e9cipiter. Impossible pour moi de b\u00e2cler ou g\u00e2cher une telle oeuvre.\u00a0\u00a0Je me suis dit que si un jour il voyait mon travail, je voudrai qu&rsquo;il soit \u00e0 la fois surpris, et fier de cette reproduction.<\/p>\n<p class=\"font_8\">Tout ce que je peux vous dire, c&rsquo;est que j&rsquo;ai vraiment pris un plaisir immense \u00e0 le faire.<\/p>\n<p class=\"font_8\">J&rsquo;ai pris mon temps pour vraiment \u00eatre le plus fid\u00e8le \u00e0 l&rsquo;original. Une fois congel\u00e9e et d\u00e9moul\u00e9e, on poche \u00e0 nouveau de la mousse afin de sculpter la forme du citron. J&rsquo;ai ador\u00e9 cette \u00e9tape&#8230; On assiste \u00e0 la naissance du citron&#8230;<\/p>\n<div class=\" gallery wolf-images-gallery clearfix simple-gallery hover-default padding gallery-2-columns\" id=\"gallery-661\" style=\"\"><div class='block'><a title=\"\" href=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2018\/03\/20180308_205730-2000x1125.jpg\" class=\"lightbox image-item\" rel=\"gallery-661\"><img src=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2018\/03\/20180308_205730-960x480.jpg\" alt=\"20180308_205730\"><\/a><\/div><div class='block'><a title=\"\" href=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2018\/03\/20180309_193743-844x1500.jpg\" class=\"lightbox image-item\" rel=\"gallery-661\"><img src=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2018\/03\/20180309_193743-960x480.jpg\" alt=\"20180309_193743\"><\/a><\/div><\/div>\n<p class=\"font_8\">Comme les autres fruits, le citron est plong\u00e9 congel\u00e9\u00a0dans un enrobage color\u00e9 compos\u00e9 de 50% de beurre de cacao et 50% de chocolat blanc Zephyr. Cet enrobage va figer instantan\u00e9ment et va former une fine coque craquante.<\/p>\n<p class=\"font_8\">Arrive alors l&rsquo;\u00e9tape la plus d\u00e9licate. La pulv\u00e9risation de ce m\u00eame enrobage pour cr\u00e9er les asp\u00e9rit\u00e9s typiques de la peau d&rsquo;agrume. Un peu de poudre d&rsquo;or pour leur donner de la brillance et le citron est bel et bien vivant&#8230;<\/p>\n<p class=\"font_8\">Quant \u00e0 la d\u00e9gustation, elle m&rsquo;a laiss\u00e9 sans voix. Cette fra\u00eecheur envahissante en est presque enivrante. C&rsquo;est tout simplement incroyable.<\/p>\n<p class=\"font_8\">J&rsquo;ai d\u00e9j\u00e0 r\u00e9alis\u00e9 la poire et la cl\u00e9mentine.
