J&rsquo;ai\u00a0eu la chance d&rsquo;avoir \u00e9t\u00e9 mis au courant directement par M. Grolet que j&rsquo;avais rencontr\u00e9 au Meurice au mois de mai.<\/p>\n<p class=\"font_8\">Quand j&rsquo;ai ouvert son livre, je me suis tout de suite mis en t\u00eate de r\u00e9aliser un de ses fabuleux trompes l\u2019\u0153il. Nous sommes en pleine p\u00e9riode de f\u00eates de No\u00ebl et j&rsquo;ai pens\u00e9 que la cl\u00e9mentine \u00e9tait le fruit id\u00e9al pour terminer un repas copieux.<\/p>\n<p><a href=\"http:\/\/omongategj.cluster026.hosting.ovh.net\/omg\/wp-content\/uploads\/2018\/03\/20171220_183855.jpg\"><img loading=\"lazy\" class=\"size-medium wp-image-379 aligncenter\" src=\"http:\/\/omongategj.cluster026.hosting.ovh.net\/omg\/wp-content\/uploads\/2018\/03\/20171220_183855-300x169.jpg\" alt=\"\" width=\"300\" height=\"169\" \/><\/a><\/p>\n<p class=\"font_8\">M. Grolet explique souvent que le choix des mati\u00e8res premi\u00e8res est essentiel pour avoir un r\u00e9sultat optimal. Je suis donc all\u00e9 acheter des cl\u00e9mentines corses r\u00e9put\u00e9es pour leur quantit\u00e9 g\u00e9n\u00e9reuse\u00a0en jus et leur go\u00fbt sucr\u00e9.<\/p>\n<p class=\"font_8\">Ce dessert est compos\u00e9 d&rsquo;un insert marmelade de cl\u00e9mentine, d&rsquo;une ganache mont\u00e9e cl\u00e9mentine et d&rsquo;une coque en chocolat blanc. L&rsquo;insert et sans conteste la pr\u00e9paration la plus longue car il faut blanchir les fruits, les pocher, les d\u00e9tailler, les assaisonner et les congeler en sph\u00e8res. La ganache mont\u00e9e elle n&rsquo;est pas compliqu\u00e9e. De la cr\u00e8me, du chocolat blanc, du jus de cl\u00e9mentine est le tour est jou\u00e9. On monte la ganache, on la poche dans un moule sph\u00e9rique ou en forme de cl\u00e9mentine, on y place un insert, on recouvre du reste de ganache mont\u00e9e et on fait prendre au froid.<\/p>\n<p class=\"font_8\">Moi j&rsquo;ai utilis\u00e9 les deux types de moule. M. Grolet sculpte ses fruits, alors moi aussi j&rsquo;ai voulu le faire. Sculpter une sph\u00e8re congel\u00e9e au couteau, c&rsquo;est pas si compliqu\u00e9 que \u00e7a&#8230; ce que nous voulons c&rsquo;est de l&rsquo;irr\u00e9gularit\u00e9 pour que chaque fruit soit unique. On sculpte au couteau. J&rsquo;ai observ\u00e9 pendant de longues et nombreuses minutes. Les d\u00e9fauts sur le fruit\u00a0sont souvent les m\u00eames. Arrive alors la partie la plus technique : l&rsquo;enrobage et la finition.<\/p>\n<div class=\" gallery wolf-images-gallery clearfix simple-gallery hover-default padding gallery-2-columns\" id=\"gallery-71\" style=\"\"><div class='block'><a title=\"\" href=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2017\/12\/20171222_075817-2000x1125.jpg\" class=\"lightbox image-item\" rel=\"gallery-71\"><img src=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2017\/12\/20171222_075817-960x480.jpg\" alt=\"20171222_075817\"><\/a><\/div><div class='block'><a title=\"\" href=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2017\/12\/20171223_131521_001-2000x1125.jpg\" class=\"lightbox image-item\" rel=\"gallery-71\"><img src=\"https:\/\/www.omongateau.fr\/wp-content\/uploads\/2017\/12\/20171223_131521_001-960x480.jpg\" alt=\"20171223_131521_001\"><\/a><\/div><\/div>\n<p class=\"font_8\">La coque en chocolat est tout simplement faite en trempant le fruit congel\u00e9 dans un enrobage compos\u00e9 de 50% de chocolat blanc, de 50% de beurre de cacao et bien sur de colorant orange. L&rsquo;enrobage fige alors instantan\u00e9ment pour devenir une coque tr\u00e8s fine (1mm). A ce stade nous avons une coque lisse. Il faut maintenant la travailler pour avoir un aspect peau d&rsquo;orange. C&rsquo;est par pulv\u00e9risation du m\u00eame enrobage que nous allons l&rsquo;obtenir.<\/p>\n<p class=\"font_8\">En pulv\u00e9risant avec un a\u00e9rographe \u00e0 chocolat, on obtient un velours. Mais en insistant sur certaine zone, on obtient ces asp\u00e9rit\u00e9s qui donnent naissance au fruit. Pour finir on\u00a0pulv\u00e9rise\u00a0un peu de poudre d&rsquo;or et on applique au pinceau une l\u00e9g\u00e8re couche de nappage neutre. Pour pousser le r\u00e9alisme comme le fait M. Grolet on soude une vraie feuille de cl\u00e9mentine.\u00a0M\u00eame avec toutes ces explications, il faut essayer pour tout comprendre. Il faut voir comment agit la mati\u00e8re pour comprendre les gestes \u00e0 ma\u00eetriser.<\/p>\n<p class=\"font_8\">Il ne reste plus qu&rsquo;\u00e0 attendre la d\u00e9cong\u00e9lation afin de d\u00e9guster ce dessert hyper frais.
