Pour vous r\u00e9pondre, je vous offre le \u00ab\u00a0pas \u00e0 pas\u00a0\u00bb complet de la r\u00e9alisation.<\/p>\n<p><!--more--><\/p>\n<p class=\"font_8\"><em>(Pour 13\u00a0poires)<\/em><\/p>\n<p class=\"font_8\"><strong>Insert poire :<\/strong><\/p>\n<p class=\"font_8\">&#8211; 300g de pur\u00e9e de poire<br \/>\n&#8211; 20g de Jus de citron jaune<br \/>\n&#8211; 5g de pectine NH<br \/>\n&#8211; 50g de sucre<br \/>\n&#8211; 45 g d&rsquo;eau de vie de poire<br \/>\n&#8211; 375g de cubes de poire<\/p>\n<p class=\"font_8\">Chauffer la pur\u00e9e de poire avec le jus de citron, ajouter le m\u00e9lange pectine et sucre en pluie. Porter le tout \u00e0 \u00e9bullition pendant 2 minutes minimum. Refroidir, mixer en incorporant le moins d&rsquo;air possible. Une fois refroidie, mixer la gel\u00e9e, ajouter l&rsquo;eau de vie de poire puis m\u00e9langer les cubes de poire \u00e9goutt\u00e9s et s\u00e9ch\u00e9s sur du papier absorbant. Mouler dans des moules demi sph\u00e9riques de 4.5cm de diam\u00e8tre les 15 premi\u00e8res empruntes et bloquer au cong\u00e9lateur. Une fois congel\u00e9es, les d\u00e9mouler. Remplir une deuxi\u00e8me fois les empruntes avec le reste de pr\u00e9paration et mettre par dessus celles congel\u00e9es. Chauffer 100g de cr\u00e8me sans bouillir.\u00a0Fondre la g\u00e9latine au micro onde et l&rsquo;ajouter \u00e0 la cr\u00e8me.\u00a0\u00a0Verser sur la couverture Z\u00e9phyr\u00a0fondue et \u00e9mulsionner au fouet. Ajouter la cr\u00e8me restante\u00a0froide petit \u00e0 petit, puis l&rsquo;eau de vie de poire. Incorporer la pur\u00e9e de poire, mixer, r\u00e9server\u00a0au froid positif pendant 24h avant utilisation. J&rsquo;ai appuy\u00e9 sur les paroies du moule pour essayer de ne pas avoir de bulles. D\u00e9poser une sph\u00e8re insert poire et recouvrir de ganache mont\u00e9e. C&rsquo;est pas grave, on va s&rsquo;en servir pour rendre chaque poire\u00a0unique. Avec mes doigts j&rsquo;ai modeler les poires pour cr\u00e9er les d\u00e9fauts que peuvent avoir les vrais fruits. Les remettre au froid pendant que nous allons pr\u00e9parer l&rsquo;enrobage.<\/p>\n<p>&nbsp;<\/p>\n<p class=\"font_8\"><strong>Enrobage jaune :\u00a0<\/strong><\/p>\n<p class=\"font_8\">&#8211; 250g de beurre de cacao<br \/>\n&#8211; 250g de couverture Zephyr<br \/>\n&#8211; Les graines d&rsquo;1 gousse de vanille fendue et gratt\u00e9e<br \/>\n&#8211; QS de colorant lipo jaune<\/p>\n<p class=\"font_8\">(On peur rajouter du colorant lipo vert mais moi je n&rsquo;en ai pas mis car j&rsquo;ai pris exemple sur une vraie poire qui \u00e9tait jaune avec des traces rouge de fruit\u00a0mur)<\/p>\n<p class=\"font_8\">Dans un pichet, faire fondre le beurre de cacao et le chocolat blanc. M\u00e9langer les deux. Ajouter le colorant et les graines de vanille. Mixer sans incorporer d&rsquo;air.<\/p>\n<p class=\"font_8\"><strong>Comment sont faits les pigments de la peau de la poire ?<\/strong>\u00a0Ce sont tout simplement les graines de la gousse de vanille qui pigmente la coque en chocolat et donne l&rsquo;illusion parfaite de la peau de la poire.<\/p>\n<p class=\"font_8\"><strong>Comment est faite la coque en chocolat ?<\/strong>\u00a0Il n&rsquo;est pas question de remplir des coques en chocolat ! Il suffit de tremper les poires congel\u00e9es dans un enrobage contenant un \u00ab\u00a0tant pour tant\u00a0\u00bb de beurre de cacao et de chocolat blanc. Le froid de la poire entra\u00eene une rapide cristallisation du chocolat qui forme la coque. Pour la tremper, planter un pic a brochette dans le dessous de la poire, plonger enti\u00e8rement la poire dans le pichet avec l&rsquo;enrobage. Il ne faut pas rester longtemps. Moi je plonge et je la\u00a0ressort de suite 2 fois d&rsquo;affil\u00e9es. Il faut une coque fine ! Vous laissez s\u2019\u00e9goutter l&rsquo;enrobage et vous allez voir qu&rsquo;au bout de quelques secondes, il va figer!<\/p>\n<p class=\"font_8\"><strong>Comment sont faites les traces de fruit mur ?<\/strong>\u00a0Pas d&rsquo;a\u00e9rographe ici. J&rsquo;ai utilis\u00e9 tout simplement une bombe velours rouge (beurre de cacao). J&rsquo;ex\u00e9cute une ou deux pulv\u00e9risation tr\u00e8s l\u00e9g\u00e8res\u00a0\u00e0 environ 50cm du fruit. Bien sur, jamais au m\u00eame endroit. Je souhaite que toutes mes poires soient diff\u00e9rentes.<\/p>\n<p class=\"font_8\"><strong>Comment sont faites les \u00a0tiges et feuillage\u00a0qui font plus vrais que nature !!??<\/strong>\u00a0Ce sont tout simplement des vraies! Pour les coller, je chauffe la pointe d&rsquo;un couteau avec un chalumeau, je la pose sur le dessus de la poire pour faire fondre le chocolat , je plante la tige avec les feuilles et je refroidit de suite \u00e0 la bombe de froid.
