Attention, cette recette est capable de vous faire baver&#8230; Si j&rsquo;\u00e9tais vous, je c\u00e9derai \u00e0 la tentation !<\/p>\n<p>Les amis : recette !<\/p>\n<p><em><strong><span style=\"font-size: 10pt;\">(pour 6 millefeuilles individuels tr\u00e8s gourmands !)<br \/>\n<\/span><\/strong><\/em><\/p>\n<ul>\n<li><b>P\u00e2te feuillet\u00e9e invers\u00e9e (J-2)<br \/>\n<\/b><span style=\"font-size: 10pt;\"><em><strong>(beurre mani\u00e9)<\/strong><\/em><\/span><br \/>\n&#8211; 140g de farine T55<br \/>\n&#8211; 300g de beurre de tourage<br \/>\n<span style=\"font-size: 10pt;\"><em><strong>(d\u00e9trempe)<\/strong><\/em><\/span><br \/>\n&#8211; 130g d&rsquo;eau<br \/>\n&#8211; 14g de fleur de sel<br \/>\n&#8211; 310g de farine T55<br \/>\n&#8211; 90g de beurre de tourage<\/li>\n<\/ul>\n<p>Pour le beurre mani\u00e9, mettre dans la cuve du batteur muni de la feuille, le beurre froid en petits morceaux avec la farine. M\u00e9langer \u00e0 vitesse moyenne jusqu&rsquo;\u00e0 obtenir une p\u00e2te homog\u00e8ne. D\u00e9barrassez et faites en un carr\u00e9 d&rsquo;environ 25&#215;25 cm. Filmer et mettre au froid pendant 2 heures. Pour la d\u00e9trempe, mettre dans la cuve du batteur muni du crochet, l&rsquo;eau, la fleur de sel et la farine. Ajouter le beurre tr\u00e8s pommade. P\u00e9trir \u00e0 petite vitesse jusqu&rsquo;\u00e0 obtenir un m\u00e9lange homog\u00e8ne. D\u00e9barrasser et faites en un carr\u00e9 d&rsquo;environ 16&#215;16 cm. Filmer et mettre au froid pendant 2 heures. Enfermer la d\u00e9trempe dans le beurre mani\u00e9, puis \u00e9taler de mani\u00e8re \u00e0 pouvoir r\u00e9aliser le tourage. Faites 2 tours doubles et 1 tour simple. Moi, je fais le premier tour double et je laisse reposer 1 nuit. Le lendemain, je fais le 2\u00e8me tour double et je laisse reposer 1 nuit. Faire chauffer la cr\u00e8me (1) dans la casserole avec le glucose et le sucre inverti. A \u00e9bullition, verser sur la chocolat et la masse g\u00e9latine pour faire l&rsquo;\u00e9mulsion. Rajouter la cr\u00e8me fleurette (2) froide et bien m\u00e9langer au mixeur plongeant. Filmer au contact et placer au froid pendant la nuit.<\/p>\n<ul>\n<li><b>Opaline\u00a0<\/b><br \/>\n&#8211; 100g d&rsquo;eau<br \/>\n&#8211; 300g de sucre<\/li>\n<\/ul>\n<p>Dans une casserole faire un caramel blond avec l&rsquo;eau et le sucre. Le verser sur un tapis silicone et laisser refroidir. Casser la plaque de caramel afin de le r\u00e9duire en poudre au robot-coupe. Stocker dans une boite herm\u00e9tique \u00e0 l&rsquo;abri de l&rsquo;humidit\u00e9.<\/p>\n<ul>\n<li><b>Montage (Jour J)<\/b><br \/>\n&#8211; feuilletage invers\u00e9<br \/>\n&#8211; opaline<br \/>\n&#8211; ganache chocolat au lait<br \/>\n&#8211; p\u00e2te de pralin\u00e9<br \/>\n&#8211; noisettes caram\u00e9lis\u00e9es<br \/>\n&#8211; feuille d&rsquo;or<\/li>\n<\/ul>\n<p>Abaisser le feuilletage invers\u00e9 \u00e0 2 mm d&rsquo;\u00e9paisseur. Remettre au froid pendant 30 minutes sur une plaque avec un papier cuisson.\u00a0 Pr\u00e9chauffer le four \u00e0 170\u00b0C. Recouvrir la p\u00e2te d&rsquo;une autre feuille de papier cuisson et poser une plaque directement dessus afin de limiter le d\u00e9veloppement \u00e0 la cuisson. Cuire pendant 45 minutes \u00e0 170\u00b0C. Sortir du four et d\u00e9tailler d\u00e9licatement des rectangles de 4 cm par 11 cm \u00e0 l&rsquo;aide d&rsquo;un couteau scie. Remettre les rectangles sur la plaque et saupoudrer d&rsquo;opaline en fine couche r\u00e9guli\u00e8re. Replacer au four \u00e0 m\u00eame temp\u00e9rature en surveillant. Sortir quand la caram\u00e9lisation souhait\u00e9e est atteinte (3 ou 4 minutes). Sortir et laisser refroidir sur grille. Monter la ganache au batteur muni du fouet. Mettre dans deux poches. Une munie d&rsquo;une douille unie de 12 et une munie d&rsquo;une douille Saint-Honor\u00e9. Sur un premier rectangle, le c\u00f4t\u00e9 caram\u00e9lis\u00e9 en bas, pocher trois tubes de ganache mont\u00e9e. D\u00e9poser entre les tubes, deux filet de pralin\u00e9 pur. Poser un deuxi\u00e8me rectangle et r\u00e9p\u00e9ter l&rsquo;op\u00e9ration. Poser le troisi\u00e8me rectangle le c\u00f4t\u00e9 caram\u00e9lis\u00e9 en haut. Tourner le millefeuille sur la tranche. Pocher un ruban de ganache mont\u00e9e sur le dessus \u00e0 la douille Saint-Honor\u00e9. D\u00e9poser des \u00e9clats de noisettes caram\u00e9lis\u00e9es et d\u00e9poser quelques pointes de pralin\u00e9 pur.
