Parmi les classiques, il y en a un que je voulais faire depuis longtemps : le g\u00e2teau basque. Il est compos\u00e9 seulement de deux pr\u00e9parations. Une p\u00e2te sabl\u00e9e gourmande et une cr\u00e8me p\u00e2tissi\u00e8re enrichie d&rsquo;amande et de rhum. J&rsquo;adore le d\u00e9guster au go\u00fbter lorsque le ventre r\u00e9clame, plut\u00f4t qu&rsquo;en dessert. Ajouter les \u0153ufs et jaunes d\u2019\u0153ufs et bien m\u00e9langer. Ajouter le m\u00e9lange de farine tamis\u00e9e et de levure et m\u00e9langer \u00e0 la feuille \u00e0 petite vitesse juste le temps d&rsquo;amalgamer les ingr\u00e9dients. Ne pas donner de force \u00e0 la p\u00e2te. Mettre la p\u00e2te sur le plan de travail et la fraser. Diviser en 4 p\u00e2tons, les filmer et laisser reposer au froid toute une nuit.<\/p>\n<ul>\n<li><b>Cr\u00e8me p\u00e2tissi\u00e8re<br \/>\n<em><strong><span style=\"font-size: 10pt;\">(recette Thierry Bamas<\/span><\/strong><\/em><em><strong><span style=\"font-size: 10pt;\">) <\/span><\/strong><\/em><br \/>\n<\/b>&#8211; 250 g de lait entier<br \/>\n&#8211; 60 g de sucre<br \/>\n&#8211; 40 g de jaunes d\u2019\u0153ufs<br \/>\n&#8211; 30 g de poudre \u00e0 cr\u00e8me<\/li>\n<\/ul>\n<p>Blanchir les jaunes d\u2019\u0153ufs avec le sucre puis ajouter la poudre \u00e0 cr\u00e8me et m\u00e9langer. Chauffer le lait et verser sur les jaunes d\u2019\u0153ufs blanchis. M\u00e9langer et reverser dans la casserole. Cuire 30 secondes apr\u00e8s \u00e9paississement et premi\u00e8re \u00e9bullition. D\u00e9barrasser sur une plaque, filmer et mettre au froid<\/p>\n<ul>\n<li><b>Cr\u00e8me g\u00e2teau basque<br \/>\n<em><strong><span style=\"font-size: 10pt;\">(recette Thierry Bamas<\/span><\/strong><\/em><em><strong><span style=\"font-size: 10pt;\">) <\/span><\/strong><\/em><br \/>\n<\/b>&#8211; 250 g cr\u00e8me p\u00e2tissi\u00e8re<br \/>\n&#8211; 125 g de poudre d&rsquo;amandes<br \/>\n&#8211; 100 g de beurre fondu<br \/>\n&#8211; 110 g de sucre semoule<br \/>\n&#8211; 70 g d\u2019\u0153ufs<br \/>\n&#8211; 8 g de rhum brun<br \/>\n&#8211; 2 g de sel<\/li>\n<\/ul>\n<p>M\u00e9langer la cr\u00e8me p\u00e2tissi\u00e8re avec la poudre d&rsquo;amandes, le sucre et le sel. Ajouter les \u0153ufs pr\u00e9alablement m\u00e9lang\u00e9s et le rhum. M\u00e9langer. Ajouter le beurre fondu tr\u00e8s chaud. M\u00e9langer pour avoir une cr\u00e8me bien lisse<\/p>\n<ul>\n<li><b>Montage<br \/>\n<\/b>&#8211; p\u00e2te \u00e0 g\u00e2teau basque<br \/>\n&#8211; cr\u00e8me g\u00e2teau basque<br \/>\n&#8211; 1 jaune d&rsquo;oeuf<\/li>\n<\/ul>\n<p>Prendre 1 p\u00e2te p\u00e2te \u00e0 g\u00e2teau basque. Abaisser \u00e0 4 mm et foncer un cercle \u00e0 tarte de 20 cm de diam\u00e8tre. Remplir de cr\u00e8me \u00e0 g\u00e2teau basque\u00a0 au 3\/4. Bien \u00e9galiser \u00e0 la palette. Prendre un 2\u00e8me p\u00e2ton de p\u00e2te \u00e0 g\u00e2teau basque. L&rsquo;abaisser \u00e0 4 mm. Recouvrir le cercle et passer le rouleau pour souder et enlever l\u2019exc\u00e9dent de p\u00e2te. Dorer avec le jaune d\u2019\u0153uf et rayer au couteau. Mettre au congelateur juste le temps de pr\u00e9chauffer le four \u00e0 160\u00b0c. Enfourner pendant 50 minutes. Sortir du four et quand c&rsquo;est encore ti\u00e8de enlever le cercle en vous aidant d&rsquo;un couteau si n\u00e9cessaire. Laisser compl\u00e8tement refroidir avant de d\u00e9guster.
