Je trouve que son visuel est ultra gourmand&#8230; Quand je suis tomb\u00e9 sur la recette de Nicolas Haelewyn de la boutique Karamel Paris, j&rsquo;ai eu un gros coup de c\u0153ur&#8230;\u00a0 C&rsquo;est celui l\u00e0 que je vais reproduire. Ce n&rsquo;est pas parce que c&rsquo;est simple qu&rsquo;il faut n\u00e9gliger les ingr\u00e9dients. M\u00e9langer \u00e0 vitesse moyenne jusqu&rsquo;\u00e0 obtenir une p\u00e2te homog\u00e8ne. D\u00e9barrassez et faites en un carr\u00e9 d&rsquo;environ 25&#215;25 cm. Filmer et mettre au froid pendant 2 heures. Pour la d\u00e9trempe, mettre dans la cuve du batteur muni du crochet, l&rsquo;eau, la fleur de sel et la farine. Ajouter le beurre tr\u00e8s pommade. P\u00e9trir \u00e0 petite vitesse jusqu&rsquo;\u00e0 obtenir un m\u00e9lange homog\u00e8ne. D\u00e9barrasser et faites en un carr\u00e9 d&rsquo;environ 16&#215;16 cm. Filmer et mettre au froid pendant 2 heures. Enfermer la d\u00e9trempe dans le beurre mani\u00e9, puis \u00e9taler de mani\u00e8re \u00e0 pouvoir r\u00e9aliser le tourage. Faites 2 tours doubles et 1 tour simple. Moi, je fais le premier tour double et je laisse reposer 1 nuit. Le lendemain, je fais le 2\u00e8me tour double et je laisse reposer 1 nuit. Laisser infus\u00e9e et mettre au froid toute la nuit. Le jour J, faire un caramel \u00e0 sec avec le sucre (1). Faire chauffer le m\u00e9lange infus\u00e9 et d\u00e9cuire le caramel. Dans un cul de poule, mettre les jaunes, l\u2019\u0153uf entier, le sucre (2) et la poudre \u00e0 cr\u00e8me et blanchir. Verser 1\/3 du m\u00e9lange caramel chaud sur les \u0153ufs blanchis et reverser dans la casserole. Faire cuire jusqu&rsquo;\u00e0 \u00e9bullition et donc \u00e9paississement. Lisser g\u00e9n\u00e9reusement au mixeur plongeant.<\/p>\n<ul>\n<li><b>Opaline\u00a0<\/b><br \/>\n&#8211; 100g d&rsquo;eau<br \/>\n&#8211; 300g de sucre<\/li>\n<\/ul>\n<p>Dans une casserole faire un caramel blond avec l&rsquo;eau et le sucre. Le verser sur un tapis silicone et laisser refroidir. Casser la plaque de caramel afin de le r\u00e9duire en poudre au robot-coupe. Stocker dans une boite herm\u00e9tique \u00e0 l&rsquo;abri de l&rsquo;humidit\u00e9.<\/p>\n<ul>\n<li><b>Montage (jour J)<\/b><br \/>\n&#8211; p\u00e2te feuillet\u00e9e invers\u00e9e<br \/>\n&#8211; opaline<br \/>\n&#8211; appareil \u00e0 flan<\/li>\n<\/ul>\n<p>Pr\u00e9chauffer le four \u00e0 160\u00b0C. Abaisser la p\u00e2te feuillet\u00e9e \u00e0 2 mm d&rsquo;\u00e9paisseur. D\u00e9tailler un disque de 26 cm de diam\u00e8tre. Foncer un cercle \u00e0 tarte de 18 cm de diam\u00e8tre et 3 cm de haut en faisant bien retomber la p\u00e2te sur les bords. Faire cuire \u00e0 blanc \u00e0 160\u00b0c pendant 1heure en lestant l\u2019int\u00e9rieur. D\u00e9couper les bords \u00e0 l&rsquo;aide d&rsquo;un couteau scie en s&rsquo;appuyant sur le dessus du cercle. Saupoudrer l&rsquo;opaline sur un silpat. Mettre la p\u00e2te cuite dessus toujours dans le cercle. Verser l&rsquo;appareil \u00e0 flan chaud et bien lisse \u00e0 2 mm du bord. Faire cuire au four \u00e0 170\u00b0C pendant 15 minutes. Laissez refroidir \u00e0 temp\u00e9rature ambiante.
