Pour le dimanche matin, c&rsquo;est tout simplement parfait. Recouvrir avec la totalit\u00e9 de la farine. Verser d&rsquo;un c\u00f4t\u00e9 le sel, de l&rsquo;autre le sucre. Former un petit puits au centre et verser le lait, les \u0153ufs battus, et la fermiline. P\u00e9trir au crochet \u00e0 petite vitesse pendant 5 minutes. P\u00e9trir maintenant \u00e0 vitesse moyenne pendant 15 minutes. La p\u00e2te doit commencer \u00e0 se d\u00e9coller de la cuve. De temps en temps, mettre un petit coup de corne pour que la totalit\u00e9 des ingr\u00e9dients soit int\u00e9gr\u00e9e. A la fin de cette premi\u00e8re phase de p\u00e9trissage, incorporer en plusieurs fois le beurre mou en petits morceaux. P\u00e9trir \u00e0 nouveau \u00e0 vitesse moyenne environ 5 minutes. La p\u00e2te doit se d\u00e9coller de la cuve et \u00eatre \u00e9lastique. Verser la fleur d&rsquo;oranger et p\u00e9trir \u00e0 nouveau 2 minutes. D\u00e9barrasser la p\u00e2te dans un cul de poule , filmer et laisser \u00e0 temp\u00e9rature ambiante pendant 30 minutes.<br \/>\nSortir le film. La p\u00e2te a pris du volume. La d\u00e9gazer avec le poing. D\u00e9tailler 6 p\u00e2tons de 40g . Pour chaque p\u00e2ton, aplatir entre les paumes des mains, former une boule et bouler sur un plan de travail lisse et l\u00e9g\u00e8rement fleur\u00e9. Allonger un peu la p\u00e2te pour faire un petit boudin. A l&rsquo;aide de la tranche de la main former la t\u00eate avec une proportion de 2 tiers, 1 tiers. Pincer la t\u00eate et ins\u00e9rer le tout dans le moule jusqu&rsquo;au fond. Avec l&rsquo;index formant un crochet et tremp\u00e9 dans de la farine, d\u00e9marquer bien la t\u00eate du corps. Battre l\u2019\u0153uf avec le sel \u00e0 l&rsquo;aide d&rsquo;une fourchette. A l&rsquo;aide d&rsquo;un pinceau, appliquer la dorure. Laisser reposer (pointer) dans un four \u00e9teint avec un bol d&rsquo;eau bouillante \u00e0 l\u2019int\u00e9rieur pendant 1h30. Pour chaque p\u00e2ton, former un boudin r\u00e9gulier d&rsquo;une vingtaine de centim\u00e8tres. Placer les 3 boudins c\u00f4te \u00e0 c\u00f4te et les tresser. Souder les 2 extr\u00e9mit\u00e9s en aplatissant avec la paume de la main et en rabattant la soudure dessous. Battre l\u2019\u0153uf avec le sel \u00e0 l&rsquo;aide d&rsquo;une fourchette. A l&rsquo;aide d&rsquo;un pinceau, appliquer la dorure. Laisser reposer (pointer) dans un four \u00e9teint avec un bol d&rsquo;eau bouillante \u00e0 l\u2019int\u00e9rieur pendant 1h30.
