Je voulais donc r\u00e9aliser un dessert chocolat\u00e9. Je n&rsquo;ai pas cherch\u00e9 longtemps pour trouver une association de saveurs. La noisette avec le chocolat, c&rsquo;est quelque chose que pratiquement tout le monde aime. La noisette est tr\u00e8s pr\u00e9sente dans cette cr\u00e9ation. Cela m&rsquo;a permit de trouver rapidement son nom : l&rsquo;Absolu&rsquo;nut !<\/p>\n<p>Lors de ma participation \u00e0 l&rsquo;\u00e9mission du Meilleur P\u00e2tissier, j&rsquo;ai eu la chance d&rsquo;assister \u00e0 une Masterclass de Pascal Caffet. Il a r\u00e9alis\u00e9 ce jour l\u00e0, un entremets qui m&rsquo;a laiss\u00e9 un excellent souvenir, que ce soit sur le plan visuel ou gustatif. Je m&rsquo;en suis largement inspir\u00e9.<\/p>\n<p>L&rsquo;Absolu&rsquo;nut se compose d&rsquo;une mousse Inaya 64%, une mousse lact\u00e9e noisette, d&rsquo;un confit passion, d&rsquo;un croustillant noisette et d&rsquo;une dacquoise noisette. Le confit passion est pr\u00e9sent pour apporter l&rsquo;acidit\u00e9 qui r\u00e9v\u00e8lera toute la douceur de l&rsquo;entremets. J&rsquo;ai pens\u00e9 la forme de ce g\u00e2teau afin qu&rsquo;il devienne l&rsquo;\u00e9crin de mon \u0153uf de P\u00e2ques compos\u00e9 de chocolat au lait Ghana et chocolat noir Equateur.<\/p>\n<p>Techniquement, cette p\u00e2tisserie est tr\u00e8s int\u00e9ressante. C&rsquo;est la premi\u00e8re fois que je faisais un moulage de cette taille. J&rsquo;\u00e9tais un peu d\u00e9\u00e7u par l&rsquo;accumulation de traces dues aux diff\u00e9rentes manipulations. Pourtant, je m&rsquo;\u00e9tais \u00e9quip\u00e9 de gants. L&rsquo;utilisation de la bombe de froid diminue la brillance du chocolat. J&rsquo;ai pu mettre en pratique un effet \u00ab\u00a0tigr\u00e9\u00a0\u00bb sur le gla\u00e7age. Ce n&rsquo;est pas tr\u00e8s compliqu\u00e9.
